Here you will find some of my favorite recipes
Please don't be afraid if some of them lack ingredient amounts--cooking is after all, an art. I may like more salt than you, you may like more pepper. Read it, get a feel for it, and have fun with it---and always "season to taste".



Try a blend of different cheese, if you like
  New York Pizza Soup (e.b.a.)
***(That's: "Everything But Anchovies") **Start with a mirepoix--diced celery, carrot, and onion. Simmer them in some spaghetti sauce, along with sausage, pepperoni, muchrooms, sweet peppers--basically: anything you like on your pizza. Add a little sherry, or cooking wine and beef both to thin the sauce to your favorite 'soup' thickness.
Blend in some grated cheese. Don't forget some garlic, Essential Seasoning, and black pepper. Cook until the veggies are tender. Cup it--then top with croutons and shredded Mozzarella cheese.

Autumn Harvest Soup--and it's variations
In a chicken broth, simmer celery, carrots, and onions(mirepoix)along with any autumn vegetables you like, especially a variety of squash--acorn, pumpkin, zucchinni, etc. Season with some sherry, chopped parsley, garlic and black pepper. I also like to add my Essential seasoning--I tend to put it in most of my recipes--except desserts :)
For Thanksgiving, add chopped turkey for "Thanksgiving Harvest Soup"--In October, add sliced or chopped hot dogs for "Halloweenie Harvest"

Yankee Pot Roast Soup
Brown a pound of cubed beef in your soup kettle in a little olive oil. When the beef is roughly 'medium' add 3 cups of mirepoix (thats 1 cup diced celery, 1 cup diced carrots, and 1 cup of diced onions--see saying 3 cups of mirepoix IS easier!!). For that "Pot Roast" affect, use a larger dice for the veggies. Cook the mixture until the onions are translucent. Add 6 cups of beef broth and 1 cup of cooking wine or sherry. Add 2 pounds of diced potatoes--again larger dice. Season with garlic, black pepper,parsley, and, of course, Essential Seasoning! Simmer until the potatoes are fork tender.
