I am Al Vargo, a chef in a small NE PA town with over 25 years in the culinary field. I'm primarily a line chef, but I excel at soups/sauces/and gravy. I even have developed my own special blend of 13 herbs/spices--'Chef Alexander's Essential Seasoning. Good on almost anything (except ice cream). I can be found at the Gourmet Family Restaurant; 645 N. Blvd(RT 6) in Chinchilla, PA.

Food, to me, is like paint to an artist
Artists work with paint, sculptors, with clay. Chefs work with food. Creating a meal can be as artful as painting a picture. If done correctly, both can be a masterpiece. And the sense of reward can also be the same. This is probably why most chefs are known for being extremely moody. Like any artist, a lot of concentration goes into a project--if successful: a masterpiece for the taste buds; if not: look out for a disgruntal artist--
(with sharp knives at his disposal). The three words a chef hates to hear (besides "pass the ketchup") are "Waiter, this sucks!" The dish may not be to your liking, but if it really 'sucked', it would have hit the trash can long before it would hit your plate. Please be kind. Chefs have feelings too.

Working on a cookbook...
Its still in the computer, but I've decided to compile my 'Soups of America' into a small paperback cookbook. Included in the book will be at least 21 American inspired soups: From 'Yankee Pot Roast' to 'Monticello Macaroni and Cheese'. Project update:  work progressing.  May opt for an e-type format for the book: either on CD-R or pdf file. More details as the project grows.

In these trying times since The War on Terror began, we have all search for ways to deal with the stress and cope. For years, I have been developing theme soups; be it by nationality (ie French Onion, Spanish Rice w/ chicken etc.) or by holiday (ie Thanksgiving Harvest or Halloweenie). Currently I am expanding my 'Soups of America' list. NEW TO THE COLLECTION (for Memorial Day) is "CREAMED CHIPPED BEEF" (topped with toasted croutons). Thats right: S.O.S.(hey, we all cope in our own way). The list now includes such soups as New York Style Pizza, All American Bacon Cheeseburger, Philly Steak and Cheese, and Texas Wiener, just to name a few. Over time, I will post some of these on this web site. If you have any concepts for a soup like these or any theme, please let me know.
